Aperitivo

The hour between the day's work and the evening's pleasures, which Italy long ago gave its own name, its own glass and its own small plates. Nobody checks the time.

The sun drops toward the hills and the whole country takes a breath. A glass of prosecco is poured and the bubbles rise at exactly the speed the conversation should. Twenty-two watercolor-inspired illustrations sit down at that table: prosciutto draped over a board going rosier as the light goes, olives shining in their oil, focaccia torn while the rosemary still steams.

Then they look out past it. Cypress-lined ridges dark against a pastel sky, a village on its hilltop going gold at the hour it was built for, vineyards walking off in their rows toward a farmhouse that has watched a few hundred of these evenings. Nothing about this is dinner. It is a pause, and Italy has had the practice.

In The Annual, Volume One, pages 132 to 135.
